About the Process

Lekali Anaerobic Naturals: Coffee cherries were harvested in 2 days for this lot on March 14th and March 15, 2023.Coffee cherries were then weighed after the floaters and other defects were removed. After removal of the floaters and defects the coffee cherries were fermented in a sealed anaerobic condition for 110 hrs. The fermentation activity was monitored twice each day along with the temperature, the pH level , aroma of the fermentation tanks and texture of the remaining juice from the macerated coffee cherries. After 110 hrs of anaerobic fermentation, the coffee cherries were then dried on drying beds for 16 days until the desired moisture level was obtained and then stored in hermetic sealed bags.

This lot bears brightness and acidity reminiscent of Grape Fruit, sweetness similar to Mosambi, better known as sweet lime and rich boldness,earthiness and spice like flavour reminiscent of cinnamon.

Lamjung, Gandaki, Nepal

Nima is sourcing Specialty Coffee from two key regions in Nepal: The first one being Lamjung in Gandaki Province in Central Nepal.

Gurungs of Nepal, living mainly on the southern flank of the Annapürna mountain massif, are natives of the village of Ghanpokara in Lamjung. A traditional warrior tribe that is deeply entrenched inthe history of the valley, the Gurungs have made their home in Lamjung and its soil.

Ganga Jung Gurung, Headmaster of the primary school at Lamjung District, has read the landscape to produce Nepal's finest Specialty Coffee in the region. His entire family, dedicated to cultivating coffee on their farm, is testament to the strength and resolve of the Gurungs.

Nuwakot, Bagmati, Nepal

The second region is Nuwakot, Bagmati Province in Central Nepal. At the confluence of rivers Trishuli and Tandi lies Nuwakot, a terrain with fertile soil that is the backbone of the specialty coffee movement in Nepal. Ideal for cultivating specialty Arabica, Nuwakot is deeply entrenched in modern Nepali history. Working with smallholder farms in Nuwakot. Nima sources high-quality Arabica yield which is transported to Kathmandu to Lekali Coffee Estate.
