About the Process
Wet Hulled Naturals: Wet Hull is a traditional method typically used in a monsoon climate to quickly dry the coffee beans. After harvesting the coffee fruits, it undergoes anaerobic fermentation for 48 hours. They are then transferred to a drying yard. When the moisture content of the cherries drops to 30%, the semi-dried cherries are hulled. This process also exposes the beans, which then continues to dry until it reaches a moisture level of about 11%.
