About the Process
Wet Hulled Honey: The wet-hulled honey process, also known as "Giling Basah" in certain coffee-producing regions, combines elements of both the wet-hulled and honey processes to create a unique coffee profile. Initially, ripe coffee cherries are handpicked and depulped to remove the outer skin, revealing the beans surrounded by a sticky, honey-like mucilage. Unlike the traditional wet-hulled process, where beans are immediately hulled while still moist, in the honey process, the beans, with their mucilage intact, are partially dried under the sun. This allows the sugars from the mucilage to seep into the beans, imparting a subtle sweetness and complexity to the final cup. After reaching a specific moisture content, the beans undergo wet-hulling to remove the parchment layer while still retaining some of the honey-like coating, contributing to a fuller body and nuanced flavor profile. Finally, the beans are dried to the desired moisture level, sorted, and packaged for export, resulting in a coffee with a distinctive combination of earthy, fruity, and sweet notes cherished by coffee aficionados.

Together, these flavors weave a tapestry of taste that is both indulgent and well-rounded, offering a multisensory experience that delights the palate.
