About the Process
Anaerobic Naturals: This is a unique experiment carried out by Ratnagiri Estate for Subko. An in-house created Koji strain is sprinkled onto the coffee fruits and allowed to ferment in a controlled environment, layer by layer, for 36 hours. These fermented coffee cherries are subsequently transferred to African raised beds for slow drying over a period of 25 days.
