About the Process

Aerobic Fermented Black Honey: An aerobically fermented coffee lot where whole cherries were fermented, followed by pulping, and drying with a percentage of the fruit mucilage retained on the coffee parchment.

Flavour Meter

This lot is a yeast fermented natural process. Form Ratnagiri Estate in SCA 88+ category, we roasted this medium, with a drop temperature of 202°C. It is an Omniroast, thus working well with both filter and espresso brewing methods.
It bears a passionfruit like citric acidity, blackberries like mouthfeel, and a caramel long lasting finish. Hence, the tasting notes are Passionfruit, Blackberries and Salted Caramel.
