Our experience packs are constructed with the aim of showcasing the sensory flight of specialty microlots from the Indian subcontinent, and bringing out the various characteristics intrinsic to them, through a combination of processing and roasting iterations.
For this Ratnagiri Estate experience pack, we’ve chosen multiple microlots from a single harvest at Ratnagiri Estate that have been processed and roasted uniquely.
We've curated and pre-set a few options for you to choose three uniquely processed and roasted Microlots of 250G each. Details of the three lots that constitute this experience pack are provided below.
Ratnagiri Estate: Lot #26/2
Process: Honey Process
The honey process involves separating the cherry skin from the coffee beans inside, leaving the fruit mucilage intact. In this process, fermentation is bypassed, and the fruit-covered coffee beans are sent to dry. The word "honey" is derived from the mucilage becoming sticky to the touch, along with the variety of colours that are created in the outer layer of drying fruit that are similar to the various hues of honey.
Medium-Dark Roast (250g)
This is a classic Ratnagiri honey shining in the cup. We dropped this into the cooling tray a little more developed than the other medium roasts, around 210 degrees.This coffee is vibrant with its acidity resembling citrus and malic acid.
Its got a pretty prominent red-apple, malic acidity coming through the cup, and awell structured lemon-lime acidity as well, so we’ve settled on the red apple and lemonade cupper’s notes for this Cauvery varietal.

Ratnagiri Estate Lot #35/2
Process: Aerobic Honey
Lot #35/2 was first aerobically fermented before being dried with a percentage of the fruit mucilage retained on the coffee parchment.
Medium Roast (250g)
For a change, this is an aerobic honey from Ratnagiri Estate - meaning that it’s not been anaerobically fermented. This lot #35/2 has been roasted medium by us here at Subko. It’s very reminiscent of the typical, beautifully balanced acidity that Ratnagiri Estate tends to produce at scale - which is an incredible thing to witness. This coffee was dropped into the cooling tray at 204°C, making for a solidly developed medium roast. It has a very fudgy body, but a sort of Jasmine-like brightness that has a syrupy finish.
Cupper’s notes for this are Fudgy, Medjool Dates and Floral.

Process: Honey Process
Lot #13 is a honey processed specialty arabica lot wherein ripe cherries are partially depulped with some degree of mucilage retention, after which they are further processed and dried on raised beds.
Medium-Dark Roast (250g)
Ratnagiri Estate Lot #13 is a honey processed coffee. This one's a Hemavathi varietal, one that we don't often get at Subko. Hemavathi is one of the very interesting plant materials that planter-processor Mr. Ashok Patre has at his estate. The coffee was roasted to be a medium-dark profile. It has a distinctly sweet cashew-like texture in the mouth, could be interpreted as buttery as well. It has a certain Kokum (Garcinia indica) or black-currant-like juiciness to it as well as a bit of caramelly finish, which is reminiscent of almond Biscotti cookies.

About The Origin
Steeped in rich history, Ratnagiri Estate emerges from India's Western Ghats region of Karnataka.
Ratnagiri translates to ‘Pearl Mountains’.
We're honoured that Ratnagiri Estate has bestowed some of their most intricately processed coffees upon us. This, despite the immense challenges for them to achieve the quality they're renowned for as exporters, given the logistical nightmares that have accompanied the advent of Covid-19.
Let’s get a little geeky: Ratnagiri Estate is a biodynamic farm - a holistic, ecological and ethical approach to farming where the soil conditions wherein the coffee plants are grown are treated with the same precision and care as a winery would its vineyard - essentially the concept of ‘terroir’ as applied to coffee. It is also a Rainforest Alliance Certified farm and is home to 48 bird species, monkeys, leopards, wild boar, tigers and mongoose. Pepper is also ‘intercropped’ with the coffee plants at the farm.
A ‘lot’ of coffee can broadly be considered as coffee cherries harvested in one day of the same genetic strain - varietal - collected within 60 feet altitude variation, and processed the same way.
Each ‘lot’ we receive from Ratnagiri will have its own individual roast profile, corresponding set of cupper’s tasting notes, and its own graphic on our Ratnagiri Estate labels.
